One of the best things about summer is firing up the grill! I use the grill several times a week during the summer. It's an easy way to make a delicious, healthy summertime dinner. This recipe is so yummy and so good for you! I marinate the tuna steaks for about 30 minutes while I am preparing the side items and it is quick on the grill..
Tuna is so fresh and meaty. It is best to keep things simple. Marinate it and throw it on the grill and top it with this sweet and spicy salsa...its a party in your mouth! I love tuna because it is low in fat and has a healthy dose of omega-3 fatty acids which can help reduce your triglycerides, lower your blood pressure, and boost your immune system!
I served this with some grilled corn on the cob and a sauteed mixture of sugar snap peas, mushrooms, red peppers, and water chestnuts. For the sauteed veggies I just heated up little olive oil in the saute pan, tossed in the veggies, seasoned with a little soy sauce and sesame oil and ground ginger. I just saute till they are crisp-tender. Ok... on to the star of the show!
You will need (for the tuna)
4-6 tuna steaks
1/4 cup soy sauce
3/4 cup water
1/4 cup unsweetened pineapple juice
1/2 teaspoon fresh ground ginger
1/4 teaspoon garlic powder
2 Tablespoon honey
Place the tuna steaks in a shallow dish. Mix all the other ingredients together in a bowl. Pour the mixture over the steaks. Place in the refrigerator and allow to marinate for about 30 minutes, turning a time or two. When it's ready, heat up the grill to medium-high heat. Grill the tuna about 4 minutes on each side for medium rare. Cook more if you want it more done.
You will need (for the salsa):
1/2 pineapple diced into 1/2 inch cubes
1 mango diced into 1/4 inch cubes
1 jalapeno minced (2 jalapenos if you want more heat)
1/2 cup to 3/4 cups chopped fresh cilantro leaves
Mix together all ingredients. It is best to let this sit for a while so all the flavors can get acquainted!
Serve the salsa atop the grilled tuna steaks.
