This grilled chicken dish is just so colorful and flavorful, and you probably have everything you need to make it right there in your kitchen! All you need is chicken breasts, peppers, onion, mushrooms, Monterey Jack cheese, olive oil, and a few spices. The chicken gets coated with a mixture of a few spices and gets grilled along with the veggies, and topped with a little monterey jack cheese and broiled for a couple of minutes, and that is it! It is simple, but very tasty!
Here's what you need:
4 boneless, skinless chicken breasts
1 1/2 T olive oil
1 t onion powder
3/4 t ground cumin
3/4 t salt, divided
1/4 t chipotle chili powder
1 green bell pepper sliced in rings
1 red bell pepper sliced in rings
1 yellow bell pepper sliced in rings
1-2 cups sliced mushrooms
1 Vidalia onion cut in rings
3/4 to 1 cup of shredded Monterey Jack cheese

In a bowl combine the olive oil,onion powder, cumin, 1/2 t of the salt, and the chili powder. Preheat the grill to high heat. Coat both sides of the chicken breasts with this mixture. Place the chicken on the grill and place the veggies on a grill rack and spray with cooking spray and season with the remaining salt. Grill both the chicken and the veggies about 8-10 minutes turning once, until done. Place the chicken on a baking sheet and top each piece with an equal amount of grilled veggies, then sprinkle each piece with an equal amount of cheese. Place in the oven under the broiler or on 450 just till the cheese is melted. Be careful! This doesn't take long! This is quick and delicious for any night of the week! This is also a great idea for meal prep. Serve this with rice and another vegetable of your choice for a great meal!
