Pork Chops With Roasted Apples and Onions



Pork Chops and applesauce sweetheart! Ok it's not applesauce, but it's roasted apples and onions with these delicious pork chops! What a sweet and savory combination of flavors! You will enjoy this quick and tasty twist on pork chops!

Here's what you need:

2 T olive oil, divided

1 vidalia onion sliced

2 cups Gala apple wedges

1 T butter, divided

2 t fresh thyme leaves

1/2 t salt

1/2 t ground black pepper

4 bone-in center cut pork loin chops ( 1/2 inch thick)

1/2 cup chicken broth

1/2 t cornstarch

1 t cider vinegar

Preheat oven to 400. Heat a large oven-proof skillet over medium-high heat. Add 1 t oil to pan and swirl to coat. Add onions to pan. Cook 2 minutes or until lightly browned. Add apples to pan. Place in oven. Bake at 400 for 10 minutes or until onions and apples are tender. Stir in 2 t butter, thyme, 1/4 t salt ad 1/4 t pepper. Heat a large skillet over medium-high heat. Sprinkle pork with the remaining salt and pepper. Add remianing oil to pan . Add pork to pan. Cook about 3-4 minutes per side until done. Remove pork and keep it warm. Combine broth and cornstarch in a small bowl, stirring with a whisk. Add broth mixture to the pan, bring to a boil, scraping loose bits from the bottom of pan. Allow to reduce down to about 1/4 cup. Stir in vinegar and remaining butter. Serve sauce over pork and apples.
