Blackened Salmon with Butternut Squash and Broccoli



This combination of the spice of the blackened salmon and the slight sweet of the butternut squash was a winner! I made the blackening seasoning and sprinkled it on the salmon and baked it in the oven for a few minutes, sauteed the butternut squash and broccoli and it was a quick, but elegant dinner!

Here's what you need to serve 4:

4 salmon filets

1 T paprika

1 T chili powder

1 T ground thyme

1 t onion powder

1 t salt

1 t garlic powder

1 t black pepper

1/4 t dry mustard

1/4 t ground red pepper

1 butternut squash peeled and seeded and chopped in 1/2 inch cubes

2 cups fresh broccoli florets

2 T olive oil divided

salt and pepper to taste

Mix all of the seasonings together for the blackening seasoning. Preheat oven to 375. Spray a baking sheet with cooking spray. Coat all sides of the salmon filets generously with the seasoning mix. Bake for 12-15 minutes or until done. Do not overcook. Meanwhile heat the divided olive oil in two separate skillets. Saute the broccoli and the butternut squash separately and season to taste with salt and pepper. Saute until they are cooked to desired tenderness. Serve the salmon with the veggies. Simple and elegant! Voila!
