Rotisserie Chicken Noodle Soup

I know I just posted a chicken soup recipe yesterday, and I was going to save this one to post later......well it is a yucky rainy day today and I just thought that maybe someone out there needed a super-quick, delicious homemade chicken noodle soup recipe like right now! This recipe is so quick because you start with a grocery store bought rotisserie chicken and wow is it comfort in a bowl! Maybe you or a family member has the sniffles, or maybe you just crave something warm and comforting today. Either way, this is your ticket to a a wonderful meal in less than thirty minutes!

Here's all you need:

1 rotisserie chicken, meat pulled apart into bite-sized pieces

1 T olive oil

3 celery stalks sliced

3 carrots sliced

1 medium onion chopped

8 cups reduced sodium chicken broth

1 can cream of chicken soup

1/2 t dried basil

1/4 t black pepper

3 cups uncooked whole wheat egg noodles ( regular egg noodles if you can't find whole wheat)

1 T fresh parsley minced

In a large pot, heat the oil. Add the onions, celery, and carrots. Cook for about 5 minutes until tender. Add the broth, cream of chicken, basil and pepper. Stir in the noodles and cook 12-14 minutes or until al dente. Stir in chicken and fresh parsley. It is ready to serve! Enjoy this tonight!
