Applewood Salmon with Mango Salsa



Ready for something other than turkey or ham? This quick salmon dish will be a light, refreshing change from all the holiday food. I used one of my favorite seasoning mixes on this salmon...McCormick Applewood Rub. The salmon can be grilled or baked. The real star of the dish though is the mango salsa! I bought these mangoes at Kroger the other day and they were amazing! I love the sweet heat of the salsa with the salmon! Yum! I know you will enjoy this simple but delicious dish!

For the salmon (4 to 6 filets)

McCormick Applewood Rub

Sprinkle each salmon filet with the Applewood Rub, generously, but not too much. Do this to your taste. If you want to grill it, grill on medium high heat for a total of about 8 minutes ( 4 minutes or so per side) or until it is flaky. If you want to bake it, bake at 400 for about 12 minutes or until it is flaky. Do not overcook!

For the mango salsa:

2 ,ripe mangoes (peeled and diced)

1 small jalapenos ( seeded and minced)

1/2 small red onion minced

juice of 2 limes

1/2 cup fresh cilantro leaves (torn)

Mix all of these ingredients together and let it sit at room temperature while you prepare the salmon.

To serve, just top the cooked salmon with the mango salsa! Delish!
