Crock Pot Pepper Steak

This pepper steak recipe will probably be one of your new favorite recipes for the Crock Pot! I cut a sirloin roast into small strips for this, but sirloin steak could be used as well. It was so quick to prepare and I just tested it for dinner and it tastes amazing! I served this over brown rice with sauteed broccoli on the side. This is good stuff that your family will enjoy! Make a little extra for prepping meals for later too!

Here's what you need: ( to serve 4)

1 1/2 to 2 lbs sirloin steak or roast

2 T olive oil

1 large onion sliced

2 green bell peppers sliced

1/4 cup lower sodium soy sauce

1 garlic clove minced

1 t honey

1/2 t salt

1/4 t ground ginger

1/4 t black pepper

1/2 t sesame oil

1 can diced tomatoes drained (14 1/2 oz)

1 T cornstarch

Cooked whole grain brown rice to serve ( you could also serve this with noodles)

Slice the steak or roast into strips about 3 inch x 1 inch. Brown the steak in a large skillet in the olive oil. Place the beef strips in the Crock Pot. In a bowl mix together the soy sauce,ginger, garlic, honey, salt, pepper, sesame oil and sliced onion. Pour this mixture over the beef and stir a little to mix. Cover and cook on high for 4 hours ( or about 6 hours on low). Add the tomatoes and the sliced peppers and cook about one more hour or until the peppers are tender. Mix the cornstarch with about 1/2 cup cold water and stir this into the hot steak and pepper mixture. Allow this to thicken a little. Serve this over rice or noodles if desired. Enjoy!
