If you go to any Indian restaurant in the United States, you will probably see this dish on the menu...it is most likely one of the most popular dishes on that menu! If you have never tried this delicious Indian dish, you really really need to! It consists of tender chunks of boneless chicken breasts in a creamy tomato sauce full of spices, but not too spicy, just full of flavor! I love it because it is so rich and comforting! I lightened this up by replacing heavy cream with half and half, and you can also use 2% or even 1% milk. I also used fat free yogurt. This was so good for dinner tonight and the kids all loved it too! It is full of wonderful, warm spices that you are going to love.
Here's what you need: ( 4-6 servings)
1 T canola oil (or butter)
1 onion minced
2 T fresh ginger grated
5 cloves garlic crushed
8 oz. fat free plain yogurt
3/4 cup half and half, 2% or 1% milk
1 28 oz. can crushed tomatoes
2 T cumin
2 T garam masala
2 t turmeric
1 T chili powder
salt to taste
4 boneless chicken breasts, cut into small bite-sized pieces
1/2 cup fresh cilantro (or to your taste)
Basmati rice to serve it with ( or rice of your choosing)
Heat the oil in a large skillet or saucepan. Add the onions and cook till golden. Add the garlic and ginger and stir a couple of minutes. Add the cumin, garam masala, turmeric, chili powder and salt. Stir a couple of minutes. Add the tomatoes, yogurt, and milk. Let the sauce simmer about 10 minutes. Add the chicken pieces and put heat on medium and simmer for 10-15 minutes, stirring occasionally, until the chicken is cooked. Stir in the cilantro and serve with rice. Enjoy!
