My son Chase asked me, "Mom is Mexican Lasagna a thing?". I was like,"Well, let me get into the kitchen and we will find out!" I am happy to announce that YES it is a thing! I made this easy layered Mexican "Lasagna" and it is the BOMB! It is so good and perfect for a game day! We just watched UK win and we are about to watch Murray State play! Gotta love March Madness and gotta love March Madness Food! You can whip this up too!
Here's What You need:
1 package corn tortillas or whole wheat tortillas(I used corn)
2 lbs lean ground beef or ground turkey
1 large jar salsa of your choice
1/2 cup sour cream
8-10 oz. cheddar cheese, shredded
1 can refried beans
2 pouches low sodium taco seasoning
About 2 oz Queso Fresco cheese
Shredded lettuce, chopped tomatoes, cilantro, and sliced jalapenos for garnish
Preheat oven to 375. Brown the ground beef or turkey, drain fat and add the taco seasoning. Spray a 9x13 casserole dish with cooking spray, Spread about 1/4 cup of the salsa on the bottom of the dish. Put one layer of the tortillas to cover the bottom. Spread half of the refried beans on the tortillas. Next, add a thick layer of the taco meat. Next spread a layer of salsa. Next sprinkle with cheddar cheese. Put small dollops of sour cream evenly on the cheddar. Top with another layer of tortillas and repeat. Top with one last layer of tortillas and spread a small amount of salsa, and cheddar. Cover with foil and bake for 30 minutes. Uncover and add the Queso Fresco cheese. Bake uncovered for about 15 minutes more. Allow to rest before serving. Top with your choice of garnishes. YUM!
