Creole Chicken



You are going to love this saucy and

spicy creole chicken! I used an amazing creole seasoning blend that you need to try. I don't usually use a lot of pre-made seasoning blends, but this one is really good, It is Code 3 Spices, Sea Dog Rub. You can purchase this and other Code 3 Spice blends at Ky BBQ store at 212 Broadway in Paducah. You can go to their website at www.code3spices.com. Also, when you buy any of these spice blends, part of the proceeds go to benefit organizations that support Police, Fire, Medical and Military personnel!

Basically, I rubbed chicken breasts with the creole seasoning and grilled it just to mark it then finished it in the oven. You could just finish it on the grill, however. The sauce is a simple mixture of tomato puree, sauteed peppers and onions, and creole seasoning. It's that easy! You can serve this over brown rice and you have a delicious and healthy dinner! This is perfect for meal prepping too if you want to make up several meals for the week!

Here's What You Need:

4-6 boneless, skinless chicken breasts

2 T olive oil

Code 3 Spice blend, Sea Dog Rub (or Creole or Cajun seasoning of your choice) to your taste....start with 1 t and adjust to the amount of spice you want

1 28 oz. can tomato puree

2 green bell peppers, sliced

1 red bell pepper, sliced

1 onion,sliced

1 1/2 t sugar or honey

salt to taste

Brown rice cooked to serve if you want

Preheat the grill. Brush a little olive oil on each chicken breast, on both sides. Sprinkle some of the creole seasoning on both sides. Heat some oil in a skillet. Add the peppers and onions and saute till seared and softened. Add the tomato puree to the skillet, and the sugar, (or honey). Now start with 1 t of the creole seasoning and salt to taste. Add more of the spice if you prefer it spicier. Turn heat to low and allow to simmer. Meanwhile, get the chicken on the hot grill. On high heat, sear both sides to get grill marks. You can turn the grill down to medium high and finish grilling the chicken, or you can transfer it to a 400 degree oven and finish cooking for about 20 minutes or until it reaches an internal temperature of 165. (cooking time will vary depending on the thickness of the chicken breasts)

To serve, place a little cooked rice on a plate, top with one of the chicken breasts. Top that with the tomato sauce mixture. There you have it!
