This recipe is perfect for a quick and easy, grilled chicken dinner with a simple honey chipotle BBQ sauce! It is getting warmer outside, and perfect grilling weather! So fire up the grill and serve this juicy sweet and oh so slightly spicy chicken up soon! I used boneless chicken breasts, but you can use thighs, legs or whatever you like. This was simple and very kid-friendly!
Here's what you need:
4 boneless, skinless chicken breasts, or thighs, or leg and thigh quarters
2 t olive oil, divided
1/2 t salt divided
1/4 t black pepper
1/2 t ground cumin
1/2 t garlic powder
1 shallot, minced
1/2 cup ketchup ( All natural, lower sodium if possible)
2 T water
2 T apple cider vinegar
1/2 t dry mustard
1/2 t chipotle chile powder
2 T honey
Preheat the grill. Brush the chicken with half of the olive oil. Mix together half of the salt, the pepper, garlic powder, and cumin in a small bowl. Sprinkle the chicken with this seasoning. In a small saucepan, add the remaining oil, and saute the shallots till tender. Lower the heat to low-medium and add the rest of the ingredients and stir to combine. You will use half of this sauce to baste the chicken while grilling, and half to brush on to serve. So leave half of the sauce in the saucepan on low to keep warm. Now put the chicken on the hot grill and brush with the sauce. After a few minutes, turn the chicken and brush the other side with the sauce. When it is finished, serve with the remaining warm sauce brushed on. YAY!
