Ok, it is fall but it still feels like the middle of July. So I am thinking if I post a recipe for a yummy (and so easy!) fall stew, with wishful thinking, maybe it will help summon the fall weather I am so looking forward to! Yes, I love fall! I also love fall food! I just enjoy a hearty soup or stew when it starts cooling off outside. This stew is made in a flash because I used several shortcuts to make this a quick weeknight dinner idea for you! This turned out great! Bring on fall!
Here's what you need: (about 4 servings)
1 T olive oil
1 small onion, finely chopped
1 green bell pepper, chopped
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 lb turkey smoked sausage, sliced in bite-sized pieces ( the kind that is pre-cooked)
1 cup low-sodium chicken broth
2 cans black-eyed peas, drained
1 can Italian diced tomatoes, drained
cooked brown rice to serve it with (optional)
fresh cilantro leaves, chopped, for garnish
Heat the oil in a large saucepan. Add the onion, green bell pepper,jalapeno and garlic. Saute until the vegetables are soft. Stir in the turkey smoked sausage. Saute for a couple of minutes. Add in the broth, peas, and tomatoes. Bring to a boil then lower it to simmer. Allow to simmer about 15 minutes. Serve with rice, if you want, and garnish with fresh cilantro! Enjoy!
