Chicken Broccoli Stir-Fry


Better than take out! This was so yummy! The sauce is perfect! Serve this with brown rice or cauliflower rice for a delicious, healthy dinner! Here’s what you need:

1 1/2 to 2 lbs chicken thighs, trimmed and cut into small pieces

1 t minced garlic

1 t minced ginger

1/2 t salt

1/4 t black pepper

1/4 t red pepper flakes

1 T olive oil or avocado oil

4 cups broccoli florets

1/3 cup chicken broth or water

1/4 cup lower sodium soy sauce

1/2 t fish sauce

1 1/2 t sesame oil

1/2 T corn starch or arrowroot powder

Garnishes: sliced green onion and sesame seeds

Cauliflower rice or brown rice to serve


Stir the chicken pieces, garlic, ginger, salt, pepper and red pepper flakes together in a bowl. Heat the oil in a large skillet. Sauté the chicken until it is cooked through, about 7-8 minutes. Remove the chicken and set it aside.

Mix together the sauce ingredients; soy sauce, fish sauce, sesame oil and cornstarch in a small bowl.

In the same skillet, add the broccoli and the chicken broth or water. Cook about 5 minutes until it’s bright green and slightly tender. Stir the chicken back in and add the sauce. Top with the garnishes and serve with your choice of rice.
