Good stuff! Try this simple delicious casserole the whole family will enjoy! This will also make a great meal prep recipe!
Here’s what ypu need:
1 T olive oil
1 onion, sliced
3 bell peppers, sliced ( I used green, red and yellow).
8 oz mushrooms, sliced (optional)
2 T Taco or Fajita seasoning
light salt to taste (I didn’t use much)
2 cups COOKED brown rice
1 rotisserie chicken, meat shredded or about 4 cups cooked and shredded chicken
1 15 oz can fire roasted diced tomatoes, well drained
1 small can mild green chilis
1-2 cups shredded cheddar cheese
Be sure to have your rice cooked. Preheat the oven to 375. Heat the oil in a large skillet. Sauté the onions, peppers and mushrooms until soft. Drain off any liquid. Stir in the rest of the ingredients except the cheese. Transfer to a casserole dish. Bake uncovered for 20 minutes. Top with the cheese and bake about 5 minutes more until cheese is melty.
Optional garnishes: Sour cream or Greek yogurt, avocado slices, salsa, or shredded lettuce. Enjoy!
