Well this chicken tortilla casserole turned out to be a hit tonight for dinner! This cheesy, layered dish will please the whole family!
Here's what you need: (4-5 servings)
1 small to medium onion, diced
3/4 cup reduced fat cream cheese
3/4 cup shredded cheddar cheese
1 1/2 cups cooked chicken breast, chopped
1 can diced tomatoes with green chilis or Rotel, drained
6 small corn tortillas
Salt and pepper to taste
2 t cumin
1 1/2 t chili powder
1/2 t garlic powder
Optional garnishes: chopped tomatoes, jalapeños, sour cream
Preheat oven to 375. Sauté the onion in a little olive oil until cooked. In a bowl, mix together the sautéed onion, cream cheese, salt and pepper, cumin, chili powder and garlic powder. Stir in 1/4 cup of the cheddar cheese, can of tomatoes, and the chicken. Mix well. Spray a 8x8 casserole dish with cooking spray. Spread half the chicken mixture in the bottom of the casserole dish. Lay three of the corn tortillas on top (you may have to tear or cut them to cover the chicken mixture). Sprinkle on 1/4 cup of the cheddar. Repeat those three layers. Cover the dish with foil and bake for 25 minutes. Remove foil and bake 5 more minutes. Allow casserole to rest 5 minutes or so before serving. Top with optional garnishes. Yum!
