Chili Lime Shrimp Skewers


Mmmmmm! I wasn't going to let a beautiful day like today get by me without firing up the grill! I grilled these shrimp that I had marinated in a yummy mixture of lime, chili powder, garlic and other goodies. Let me tell you, I hit it out of the park! This is good stuff and tomorrow looks like it's going to be a beautiful Sunday, so here's your chance to try these out too!


Here's what you need:


1 lb wild caught large or jumbo shrimp, peeled and deveined

For marinade:

* 1/4 cup olive oil

* Zest of two limes

* Juice of two limes

* 3 garlic cloves, minced

* 1/4 t chili powder

* 1/4 t paprika

* 1/4 t red pepper flakes

* salt and pepper to taste

Fresh cilantro and lime wedges to garnish


Mix up all the ingredients for the marinade. Stir the shrimp into it, cover and place in the refrigerator for at least 30 minutes up to 2 hours. Skewer the shrimp onto skewers. Preheat the grill to high heat (about 450). Grill the shrimp about 2 minutes per side. Serve with fresh cilantro and lime wedges. Delish!
