My son Clayton and his wife Ashley are in for Thanksgiving from California and he wanted to make some of his smoky, roasted salsa for us. So he did his thing and this stuff is fantastic! I wanted to share the goodness with you all!
Here’s what you need:
10 Roma tomatoes, halved
1 white onion, halved
2 large limes, halved
1 poblano pepper, whole
1 jalapeño pepper, whole
1/2 cup cilantro, chopped
2 cloves garlic, minced
cracked pepper, salt to taste
Char the halved tomatoes on grill or cast iron on stove top on high heat. Pull when skin is blistered and char marks are present. Char the halved onion face down until good char marks are present. Char peppers on all sides until skin is blistered and peeling away. Char the lime halves face down until marks are present. Squeeze juice from the limes into a food processor. Add the tomatoes, peppers, onion, cilantro, and garlic - roughly chopped - to the food processor. Pulse until desired consistency is reached.
Add salt and pepper to taste. Allow to sit in the fridge for a while before serving. Enjoy!
