One skillet, less than thirty minutes, and absolutely delicious! This chicken dinner was most definitely a winner!
Here’s what you need:
4-5 thinly cut chicken breasts
2 T butter
salt, pepper and paprika to taste
1/2 yellow onion, finely diced
1 t minced garlic
8 oz baby bella mushroom, sliced
4 cups fresh baby spinach
1/2 cup heavy cream
1/2 cup grated Parmesan
red pepper flakes and fresh basil to garnish
In a large skillet, heat 1 T of the butter on medium heat. Add the chicken breasts, cooking 3-4 minutes per side. Season each side with salt, pepper and paprika to taste. Remove when the chicken is cooked through. Place on a plate and set aside. Heat the remaining 1T of butter. Sauté the onion, garlic and mushrooms until they are tender. Stir in the spinach. It will cook down. When the spinach is cooked down (this will only take a minute or two) stir in the cream. When it starts to simmer, stir in the Parmesan. Add the chicken back in and allow to simmer on low heat for a few minutes. Garnish and serve.
