Creamy Tomato Soup

Homemade creamy tomato soup.... perfect for a cool fall night! You’ll love how simple this recipe is too!

Here‘s what you need:

4 cups canned peeled, diced tomatoes

4 cups tomato juice

3 t dried basil

1 stick butter

1 cup heavy cream

1/4 t black pepper

salt to taste

Place tomatoes and tomato juice in a soup pan and bring to a boil. Add basil. Simmer on low for about 30 minutes. Then place this mixture, in batches, in a food processor or blender, blending till smooth. In the meantime, allow the cream to sit out at room

temperature for a few minutes. Place soup back in pan. With heat on low, add the butter and stir to melt. Slowly drizzle in the cream. Add salt to taste. Enjoy!
