Crock Pot Breakfast Casserole

Well this recipe might help you out

over the holidays! Try this delicious breakfast casserole made in the Crock Pot! Perfect for feeding a

crowd, as well as for make-ahead convenience!

Here‘s what you need:

1 lb sausage (your choice; Italian, Turkey or regular breakfast sausage) cooked and crumbled

1 red bell pepper, chopped

1 green bell pepper, chopped

2 green onions, chopped

1/2 cup cheese (your choice; feta, cheddar or any cheese you like)

12 eggs

1 cup milk

1 T Dijon mustard

1/2 t salt

1/4 t black pepper

1/4 t chili powder


Spray your Crock Pot with cooking spray. Place the cooked, drained and crumbled sausage in the bottom of the Crock Pot. Add peppers and onions. Whisk the eggs, milk, mustard and seasonings together in a bowl and pour over everything in the Crock Pot. Cook about 3 hours on low or 1 1/2 hours on high or until the eggs are set. Sprinkle a little cheese and sliced green onion on top to serve if you like! Enjoy!
