Don’t you love coming home at the end of the day and dinner is ready to serve? This delicious slow-cooked chicken will be sure to please your hungry crew!
Here’s what you need:
4-5 boneless, skinless chicken breasts
2 t paprika
1 t salt
1/2 t pepper
1/4 t cayenne pepper
8 oz sliced baby portobello mushrooms
1 red bell pepper, chopped
1 medium onion, chopped
1 can water-packed artichoke hearts, drained
1 cup white wine
1 can (6oz) tomato paste
3 garlic cloves, minced
2T minced fresh thyme, or 1 t dried thyme
your choice of pasta to serve
fresh parsley to garnish
grated Parmesan cheese to garnish
Combine the paprika, salt, pepper and cayenne. Place the chicken breasts in the
Crock Pot. Sprinkle the seasoning mix on the chicken. Add the mushrooms, artichokes and onions. Combine the wine, tomato paste, garlic and thyme and pour it over the chicken and veggies. Cook in the Crock Pot on low for 6 hours or until the chicken is tender. Serve with pasta and garnish with fresh parsley and cheese.
