I love when I can make a delicious dinner in a flash, with just a handful of simple ingredients! This easy baked lemon chicken is perfect for your busy weeknights but delicious enough to make for a special meal.
Here’s what you need: ( 4 servings)
1/2 cup chicken broth
4 T lemon juice
1 1/2 T honey
2 t minced garlic
1 t Italian seasoning
salt and pepper to taste
pinch of dried or fresh rosemary
1 T olive oil
4 boneless, skinless chicken breasts
Preheat the oven to 400. Whisk the first 7 ingredients together. Heat the olive oil in a skillet on medium high heat. Brown the chicken breasts on both sides till golden brown and lightly salt to taste. Transfer the chicken to a baking dish. Pour the lemon mixture over the chicken, lay fresh lemon slices in the pan around the chicken, and bake for 20-30 minutes or until it reaches an internal temperature of 165. I basted the chicken with the lemon mixture halfway through cooking time. Enjoy!

Could I use an iron skillet so it can go in the oven or would the lemon juice cause a problem?
