Fresh Apple Salsa

Try this delicious and easy fresh apple salsa this fall! It’s terrific with grilled pork tenderloin or chops! Sweet heat is always a winner!

Here’s what you need:

2 cups aoples, unpeeled, diced small (I used honey crisp apples)

1/2 jalapeño, seeded and minced

1/4 cup red bell pepper, diced small

1/4 cup red onion, minced

1/4 cup fresh cilantro, chopped

juice of one lime

2 t honey

1/8 t salt or to taste

(I allowed this to sit about an hour or so after combining all ingredients, at room temperature, before serving)

I served this with grilled pork tenderloin. I brushed the pork with olive oil , seasoned with salt and pepper and McCormicks Applewood seasoning. I seared it on all sides on high heat on the grill. Finished it in a 400 degree oven about 20 minutes or until it reached an internal temperature of 155-160. ( Pork is cooked safely at 145, but I prefer it cooked a little more.. but not overcooked). Let it rest 2-3 minutes, slice and serve. Enjoy!
