Garden Fresh Mexican Salad


I’m pretty obsessed with a good salad! This one was great! Fresh veggies, seasoned lean ground beef, cheese, topped with an easy homemade dressing ... yummy! You’ll love this !


Here‘s what you need (2 salads):

For dressing:

6 T plain Greek yogurt

1 T milk

1 t rice wine vinegar

2 T chopped cilantro

1 t chopped fresh jalapeño

1/4 t ground cumin

1/4 t chili powder

salt to taste

Mix all of the ingredients together by hand or in a food processor. Set this aside.

For salad:

6 cups chopped lettuce of your choice ( I used a spring mix)

1/2 lb lean ground beef

1/4 t ground cumin

1/4 t chili powder

1/4 t salt

1/4 t pepper

1/2 cup canned black beans, drained and rinsed

1/3 cup canned or frozen (thawed) whole kernel corn

1/2 cup chopped fresh tomato

3 T chopped red onion

1/2 cup shredded Mexican cheese blend

1/2 avocado chopped

2 T chopped fresh cilantro


Brown the ground beef and drain. Stir in the cumin, chili powder, salt and pepper. Add the black beans and stir to fully warm the beans. Place the lettuce divided evenly in two large salad bowls. Top each evenly with the warm beef, and the rest of the ingredients. Drizzle with the dressing . Optional: Also top with a small amount of sour cream and fresh jalapeños. Enjoy!
