Gluten-Free Swedish Meatballs


Comfort food anyone? What a great meal for a cool fall day! These are amazing, not to mention they are gluten free, and made with lean grass-fed beef! Yum!!


Here’s what you need:


For the Meatballs:

1 lb. lean ground beef ( I used very lean grass-fed beef)

1 T olive oil

1 small onion, finely diced

1 egg, beaten

1/4 cup almond flour

3 T coconut milk

1 t dried parsley

1 t garlic powder

1/4 t allspice

1/2 salt

1/8 t pepper


For gravy:

1 T butter

1 T cornstarch

1/2 cup chicken stock

1/4 cup coconut milk

Salt and pepper to taste

Fresh parsley to garnish

Rice to serve it with


In a large skillet heat the oil. Sauté the onion until it is soft. Remove the onion and place in a large mixing bowl. Add all the rest of the ingredients for the meatballs. Mix thoroughly. Form the mixture into small meatballs. Place them carefully in the skillet where you cooked the onion and cook on medium-high heat, turning carefully to cook both sides with tongs. Carefully remove them when they are cooked through onto a plate and set aside.

To make the gravy, rinse and wipe out the skillet and add the butter. Melt the butter over medium heat. Whisk in the cornstarch and then whisk in the chicken stock. When it is slightly thickened add the coconut milk. Stir until smooth and slightly thickened. Salt and pepper to taste. Add the meatballs carefully. Serve with rice if you would like and garnish with fresh parsley.
