Herb Roasted Pork Loin


This herb roasted pork loin was a crowd favorite tonight with my crew! The pork was so tender and flavorful along with the yummy veggies that roasted right along with it! It’s a one-pan dinner that will be amazing for a special occasion, or a weeknight meal like tonight!


Here’s what you need:


1 boneless Pork Loin Roast (3-4lb)

1 T olive oil

1 t salt

1 t each of dried basil, thyme and rosemary

1 t garlic powder

1/4 t black pepper

1/2 t Italian seasoning

1 16oz bag baby carrots

2 medium onions quartered

3-4 potatoes cut up


Preheat the oven to 425. In a small bowl mix the olive oil with the salt and other seasonings. Rub this all over the pork loin. Arrange the carrots, potatoes, and onions on the bottom of a roasting pan. Place the pork on top of the veggies, fat side up. Cook uncovered at 425 for 20 minutes. Lower the temperature to 400 and cook about 45 more minutes or until the pork reaches an internal temperature of 145. Remove from the oven and cover the pan. Let the pork rest for about 10-15 minutes before slicing. Serve with the roasted veggies!
