Instant Pot BBQ Beef


Ok, this was fantastic. My son, Clayton, gave me this recipe to try and see what I thought. It gets an A+ ! We loved it. You can enjoy it on a sandwich, or just as a meat entree. The sauce is divine! It is sweet and tangy. To make this even faster, you could always just use your favorite barbeque sauce, but this sauce is easy to whip up!


Here's what you need:


3 lb (or so) beef chuck roast

1 T olive oil

salt and pepper to taste

1 onion, diced

1/2 t minced garlic

1 1/2 cup beef broth


Sauce Ingredients:

1 1/2 cup ketchup

1/4 cup apple cider vinegar

1/2 cup brown sugar

2 T Worcestershire sauce

1 T paprika

1 t Liquid Smoke

1 t chili powder

1/2 t salt

1 t garlic powder

1/8 t ground cayenne pepper


Set Instant Pot to saute. Heat the oil. Cut the chuck roast into about 4 pieces. Salt and pepper each piece and brown in the hot oil and all sides. Remove the beef and set aside. Saute the onion and garlic for a couple of minutes. Stir in the broth and scrape up any bits off the bottom of the pot. Add the beef back in. Shut the lid and set the Instant Pot to pressure. Set the time to one hour. While it is cooking stir together the ingredients for the sauce. When the beef is finished cooking, allow the pressure to release naturally. When it is done remove the beef pieces and drain off the liquid in a strainer or colander. Place the beef in a large dish and shred apart with two forks. Stir in the amount of sauce you prefer on the beef and save the rest of the sauce for the side. Enjoy!
