Instant Pot Beef Stroganoff


I had never tried beef stroganoff in the Instant Pot. I had some stew meat and decided to give it a try.. it was a success! Very good! Dinner was ready in no time!

Here’s what you need:

1 T olive oil

2 cups sliced mushrooms

1 small onion, diced

1/2 t mined garlic

2 pounds beef stew meat (or boneless beef roast cut into small cubes)

salt and pepper to taste

4 oz cream cheese

1 cup beef broth

2 T tomato paste

fresh parsley to garnish

**Brown rice or riced cauliflower to serve it with. I served ours on sautéed sliced cabbage

Set the Instant Pot to sauté. Heat the oil. Sauté the onion, garlic and mushrooms about 3-4 minutes or until the onion is soft. Remove these and set aside. Season the beef with salt and pepper and sauté it in the Instant Pot until it’s brown on all sides. Turn the sauté off. In a bowl , mix the cream cheese, broth and tomato paste together well with a whisk or electric mixer until smooth. Add this mixture and the veggies back into the Instant Pot. Set it on Pressure Cook or Manual and set the timer for 22 minutes. When it’s done let the pressure release naturally. Serve with rice or sautéed sliced cabbage. I garnished with fresh parsley.
