Instant Pot Mongolian Beef

Updated: Aug 4, 2019

I am excited to share this flavorful, saucy dinner idea with you that is full of tender bites of beef.....a "take-out" dinner you can make at home in about 30 minutes! The Instant Pot makes this dish super-fast and easy to get on the table for your hungry crew! I served this with brown rice and it was great!

Here's what you need: (4 servings)

2 lb flank or flat iron steak, cut into very thin strips

1/3 cup cornstarch

2 T olive oil

3/4 cup lower sodium soy sauce

1 cup water

2 T rice vinegar

4 garlic cloves, minced

1 t ginger, minced

3/4 cup brown sugar

1/2 t red pepper flakes

2 T sesame oil

2 green onions, sliced

2 T sesame seeds

In a bowl, mix the strips of steak with the cornstarch until it is well coated. Set this aside while you gather the rest of the ingredients. Mix together the soy sauce, water, vinegar, garlic, ginger, brown sugar, sesame oil, and red pepper flakes together in a bowl.

Set your Instant Pot to saute. Add 1 T of the olive oil to it and saute half of the steak until it is starting to brown. Remove this and keep it warm. Add the other 1 T of olive oil to the Instant Pot and the rest of the steak. Saute the steak until it is starting to brown. Now add all the steak into the Instant Pot. Hit cancel on the Instant Pot.

Pour the soy sauce mixture over the steak and stir well, scraping any browned bits off the bottom of the Instant Pot. Close lid and set it to Pressure Cook and set it to 13 minutes. When it is done, release the pressure and remove the lid. Serve with rice and garnish with the green onions and sesame seeds. There you have your "Take-Out" made right at home!
