Instant Pot Taco Soup

When it's this cold outside,you need something to warm you up! This easy Taco Soup in the Instant Pot will do the trick. You could also make this on the stove and let it it simmer. We loved it and your family will too!


Here's what you need:


2 lb lean ground beef ( or ground turkey)

1 packet of taco seasoning

1 t garlic powder

1/2 t onion powder

1/2 t salt

1/2 t black pepper

1 10 oz. can Rotel

1 7 oz can chopped green chilies

3 cups chicken broth

1 can tomato sauce

1 14 oz can black beans, rinsed and drained

1 14 oz can garbanzo beans, drained

1 14 oz can pinto or kidney beans

1 14 oz can diced tomatoes

1 cup frozen corn (thawed) or 1 can whole kernel corn,drained


Optional Garnishes:

Cheddar cheese, shredded

Tortilla strips

Avocado

Sour cream

Jalapeno slices

Fresh cilantro


Set Instant Pot to saute. Brown the ground beef until fully cooked. Drain off excess fat. Add in the seasonings and stir well. Add in all the rest of the ingredients, except the corn, and shut the Instant Pot. Set it to pressure cook, and set it to 5 minutes. When it is finished, release the pressure. Stir in the corn. Adjust the seasoning with salt if you like. Serve with any garnishes you like! Enjoy!
