Italian Garlic and Herb Steak Salad

You will love this salad! I rubbed the steaks with a mixture of garlic, rosemary and lemon zest, grilled to perfection then served it on a fresh salad tossed with a simple Dijon-balsamic dressing! You can make this special dish in a matter of minutes!

Here’s what you need: (for 4 salads)

3-4 sirloin strip steaks

2 t minced garlic

1 t salt

2 T olive oil

1 t minced fresh rosemary leaves

zest of one lemon

1/4 t cracked black pepper

For Salad:

2 T olive oil

4 t balsamic vinegar

2 t Dijon mustard

1/8 t cracked black pepper

8 cups fresh spring mix

shaved Parmesan to taste

1/2 cup halved cherry tomatoes

optional; sliced almonds

Rub the steaks, evenly, with a mixture of the six ingredients listed under steak. Allow them to sit at room temperature for 15 minutes. Grill the steaks to desired doneness. Mix the first four ingredients under salad, then toss this dressing mixture with the spring mix. Divide the salad evenly on four plates. Garnish each salad with shaved Parmesan, tomatoes and sliced almonds. Slice the steaks thinly and arrange on top of the salads. Enjoy!
