This is a delicious Italian take on stuffed peppers! A mix of lean ground beef with Italian sausage make these extra good!
Here’s what you need:
6 green bell peppers, tops cut off, seeded
2 cups cooked brown rice
6 oz feta cheese crumbles
2 eggs, beaten
1/2 lb Turkey Italian sausage (or pork)
1 lb lean ground beef
1 14 oz pizza sauce
1 t Italian seasoning
1/2 t garlic powder
salt and pepper to taste
shredded mozzarella cheese to top
Prepare peppers and place them sitting upright in a slow cooker. Mix together all the rest of the ingredients except the mozzarella cheese and fill each pepper with this mixture. I left a little of the pizza sauce to spoon on top of each filled pepper. Cook on high 3-4 hours or until peppers are soft. Top with a little mozzarella on each pepper. Place lid back on the slow cooker to let the cheese melt. Enjoy!
