Loaded Chicken Breasts

This easy and delicious baked chicken breast is a perfect weeknight meal idea! Family-friendly and scrumptious! I took two large chicken breasts and pounded them out to 1/2 to 3/4 inch thickness and cut them in half, or you can use four chicken breast cutlets. You just don't want them super thick. I made an easy cheesy spread to top each one, and baked them! That's it!


Here's what you need:

4 chicken breast cutlets (1/2 to 3/4 inch thick)

Salt and pepper to taste

4 slices bacon, cooked and crumbled

1/2 cup light cream cheese

1/4 cup light mayonnaise

1/2 cup thinly sliced green onions ( a little more for topping)

1 cup shredded cheddar cheese


Preheat oven to 375. Spray a baking dish with cooking spray and lay chicken breasts in the dish. Salt and pepper each one to taste. In a bowl, mix cream cheese, mayonnaise, green onion, 1/2 cup of the cheddar cheese, and 3/4 of the bacon crumbles together. Save a little bacon for topping. Spread this mixture evenly on the chicken pieces. Sprinkle on remaining cheddar cheese. Sprinkle on remaining bacon crumbles. Bake uncovered for 30 minutes or until the internal temperature is 165. Garnish with a little sliced green onion. Enjoy!
