Are you wanting some pizza but are watching your carbs? You need to make this!! This satisfied my weekend pizza cravings! So delicious! Perfect for the whole family!
Here’s what you need:
Crust:
8 oz cream cheese
1/4 cup Parmesan cheese
2 eggs
1/4 t black pepper
1/2 t garlic powder
Toppings :
1 can (14.5oz) diced tomatoes
1 lb uncooked turkey or pork Italian sausage
1 T olive oil
1/2 t dried oregano
salt and pepper to taste ( I used very little salt)
8 oz sliced fresh mushrooms
1 1/2 cup mozzarella cheese
about 15 slices pepperoni
Preheat the oven to 400. Spray a 9x13 baking dish with cooking spray. Mix all the crust ingredients together and spread into the dish. Bake 12-15 minutes then allow to cool. Drain the can of tomatoes in a colander. Rinse the tomatoes with cold water and allow them to dry on a paper towel, patting to very dry. While they are drying, heat half of the olive oil in a skillet. Cook the Italian sausage, crumbling as you cook. When it is cooked through, drain off all excess fat. Place the sausage on top of the crust in the baking dish. Top with the tomatoes. Sprinkle with the oregano and a little salt and pepper to taste. I used just a pinch of salt. In the same skillet, add the rest of the oil and sauté the mushrooms until lightly browned. Drain off all liquid. Layer the mushrooms on the sausage/tomato mixture. Sprinkle with the mozzarella. Cut the pepperoni slices in half and layer these on top of the cheese. Bake at 400 for 25 minutes or until cheese is melty and lightly browned. Enjoy!
