Mmmmm, there's not much better than a big, juicy grilled burger in the summer with a home-grown tomato and all the fixings! If you are craving one, but are trying to watch your carbs, this is the answer! I grilled some portobello mushrooms to be the "buns" for these delicious burgers and they hit the spot! These are simple, but they really satisfied my craving for a yummy, cheesy grilled burger!
Here's what you need: ( 4 burgers )
4 lean ground beef (or ground turkey) burger patties
4 large portobello mushrooms
salt and pepper to taste
1 onion, thinly sliced
4 slices swiss cheese
1 large tomato, sliced
baby greens, or lettuce for each burger
1 T olive oil
about 2-3 t light mayo
Preheat the grill. Season the burger patties with salt and pepper. Remove the gills from the underside of the portobello mushrooms. Season the mushrooms with salt and pepper.
Heat the oil in a skilllet. Place the onion slices in the hot oil and saute until they are caramelized. Remove and set these aside.
Grill the burgers until they are done to your liking. About halfway through the grill time, place the mushrooms on the grill. Turn the mushrooms and grill on each side till they are tender. Remove the mushrooms, cover and set aside. When the burgers are done, place the caramelized onions evenly on each burger and top each one with a slice of swiss cheese. Turn off the grill and shut the lid to allow the cheese to melt.
To assemble the burgers, pat each mushroom dry. Spread a little light mayo on each one. Place the lettuce, then the tomato slice, then the burger on each one. Top each with a little ground black pepper. They are ready to enjoy!
