New Year’s Day Hoppin’ John


Happy New Year to all my friends! In a couple of days it will not only be a new year, it will be also be a new decade! Time sure flies! I can’t remember a New Years Day that I didn’t have black eyed peas. This recipe is a super easy and delicious way to bring in the new year with those yummy peas! I used canned peas, but you can use dried, as long as they have soaked for at least six hours. This is really basic but very hearty. You can add one can of diced tomatoes, or a diced jalapeño if you wanted. This recipe is great if you have leftover ham ! Enjoy!


Here‘s what you need:

1 onion, diced

1 green bell pepper, diced

2 stalks celery, diced

1 T olive oil

2 cups diced ham

4 cans black eyed peas, drained

4 cups chicken broth

1/2 t dried thyme

salt and black pepper to taste

cayenne pepper to taste

3 green onions, sliced

cauliflower rice, or brown rice to serve it with


In a soup pan, saute the onion, celery, and green pepper in the olive oil until soft. Stir in the ham, peas, broth and seasonings. Bring to a boil. Then lower it to simmer and allow it to simmer at least 30 minutes. Stir in the green onions and serve over rice. Add a little Louisiana hot sauce if you would like! Yum!
