Mmmmm....sometimes I get quite the craving for fried shrimp! It is definitely one of my all-time favorites! Well, I have a healthier version of my favorite, and I have to say it's just as tasty, if not even better, than traditionally fried shrimp! Simple and delicious! Enjoy!
Here's what you need: (4 servings)
1 lb. large or jumbo shrimp, peeled and deveined ( I like to leave the tails on)
Olive oil spray
1 T canola oil
1 egg
1 cup panko bread crumbs
salt to taste
Preheat the oven to 400. In a shallow bowl, beat the egg and season with a little salt. In another shallow bowl, put the panko crumbs. Spray a baking sheet with a little olive oil or other cooking spray. Dip each shrimp in the beaten egg first, then coat each shrimp in the panko crumbs. Place them on the baking sheet in one layer. Drizzle each shrimp evenly with the canola oil. Bake about 8 minutes, or until the shrimp is opaque and the crumbs are crisp.
