Pepperoni Pizza Soup

This is the perfect weeknight meal that is so kid-friendly! If you love pepperoni pizza, then you’ll love this soup! Packed with flavor!


Here’s what you need:

3.5 oz thinly sliced pepperoni (regular or turkey)

8 oz white mushroom, sliced

3 cloves garlic, minced

1 small onion, halved, then thinly sliced

1 t dried oregano

1/2 t salt

4 cups chicken broth

1 32 oz marinara sauce

1 14.5 oz can diced tomatoes

3 T tomato paste

1/4 cup Parmesan cheese, grated

1/4 cup fresh basil leaves torn or thinly sliced

Mozzarella cheese to garnish

optional: Italian croutons to garnish


In a soup pot, cook the pepperoni slices about 3 minutes or so over medium high heat to get a little crispy. Remove with a slotted spoon and let them drain on paoer towels. In the same pot, sauté the onion, mushrooms, garlic, oregano and salt until the veggies are softened. Add in the broth, marinara, tomatoes, tomato paste and cheese. Stir well to incorporate. Bring to a boil, then lower heat to simmer. Simmer about 15 minutes. Remove from heat. Stir in the basil and pepperoni slices. Serve with your favorite toppings like mozzarella and or croutons! Enjoy!
