I love using a rotisserie chicken from the grocery store to create easy and delicious dishes! It’s a great shortcut to make our lives a little easier! For this recipe you just sauté peppers and onions , add the meat from the rotisserie chicken and fajita seasonings! This can be served on chips for yummy nachos, or on a bed of greens for a salad! You can even serve it on a bed of rice for a delicious fajita bowl! Top with cheese and you are good to go!
Here‘s what you need:
1 Rotisserie chicken, deboned and meat pulled apart
2 T olive oil
1 large onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
Fajita seasoning:
2 t chili powder
2 t paprika
2 t garlic powder
2 t cumin
2 t salt
1 t dried oregano
1/2 t black pepper
Shredded Monterey Jack cheese or queso for topping
Chips, mixed greens or rice to serve it on
Mix all the ingredients together for the fajita seasoning and set aside.
Heat the olive oil in a large skillet. Sauté the peppers and onions until soft. Stir in the seasoning mix and the shredded chicken. Serve on chips, mixed greens or rice. Top with cheese! Yay!
