Southwestern Beef and Rice Skillet


Perfect weeknight dinner! Hearty and delicious! You can get this meal together quickly and it will satisfy the whole gang. Serve with your favorite toppings for a weeknight favorite! Here’s what you need:

1 1/2 lb lean ground beef

1 onion, diced

1 large green pepper, diced

1 jalapeño, minced

1 1/2 cup uncooked instant brown rice

1 can diced tomatoes with green chilis OR 1 can Rotel, drained

1 1/2 cup beef broth

1 t cumin

1/4 t chili powder

1/4 t salt , or to taste

1/4 t pepper

1 cup shredded Mexican style cheese


In a large skillet, cook beef, onion, green pepper, and jalapeño over medium heat until the meat is cooked and the veggies are soft. Drain. Add rice, tomatoes, broth and seasonings. Bring to a boil, then lower heat to simmer. Cover and allow to simmer about ten minutes or until all the liquid is absorbed. Fluff with a fork and remove from the heat. Sprinkle with the cheese and let it stand until the cheese is melted. Serve with these optional toppings:

Shredded lettuce, jalapeños, sour cream or salsa. Enjoy!
