Oh my goodness! If you enjoy a good stuffed pepper, and you love a simple dinner idea, then this is for you! Everything you love about stuffed peppers, but in an easy casserole. The whole family will love this!
Here's what you need:
1 1/2 lb. lean ground beef
1/2 cup chopped onion
1 large green bell pepper, chopped
1 can (14 0z) petite diced tomatoes, drained
1/2 cup UNCOOKED rice (brown or long grain)
1/2 cup water
1 T Worcestershire sauce
1/3 cup ketchup
1 egg, beaten
1/2 t salt (or to taste)
1/4 t pepper
1 cup shredded cheddar cheese
Preheat oven to 375. In a large skillet, cook the ground beef until cooked through, lightly salt ,and drain off fat. Put the beef in a long baking dish. Stir in the rest of the ingredients, except for the cheese. COVER with foil and bake for 45-50 minutes, until rice is tender. Top with the cheese and cook an additional 5 minutes, uncovered, or until the cheese is melted. Enjoy!
Made this one tonight, because I love stuffed peppers! It was amazing! Even my husband loved it and had seconds, too! So easy.
