
My friend Karyn and I went to a local farm today and picked the most beautiful blueberries and raspberries! I decided to come home and put together a summery spinach and berry salad! I’m so glad I did! I made an easy raspberry vinaigrette that is just so amazingly yummy on this salad! Enjoy! We sure enjoyed our morning picking berries!

Here’s what you need per salad:
Handful fresh baby spinach leaves
Handful fresh raspberries
Handful fresh blueberries
3-4 sliced strawberries
1-2 T pecan halves or pieces
1 T or so goat cheese crumbles
For Raspberry Vinaigrette:
( this will make enough for about 4 salads or more)
3/4 cup raspberries
1/4 cup olive oil
1 T red wine vinegar
1/2 t Dijon mustard
1 T honey
sprinkle of salt to taste
Place all salad ingredients in bowls. Put vinaigrette ingredients in a food processor or blender. Blend until
smooth. Drizzle a little vinaigrette on your salad. Enjoy!
