Turkey Cobb Salad



Do you have leftover turkey from Christmas? Here’s a healthy and delicious way to enjoy it! I made a quick and easy apple cider vinaigrette to go with it and it was perfect!

Here’s what you need for two salads:

1 cup cooked Turkey, chopped

6 cups baby spinach, or spring mix

4 strips bacon, cooked and crumbled ( I used turkey bacon)

1/2 cup chopped carrots

2 hard boiled eggs, chopped

1 avocado chopped

1/4 cup blue cheese ( or feta or goat cheese)

2 T sliced almonds or chopped pecans


Apple cider vinaigrette:

3 T olive oil

2 T Apple cider vinegar

1/2 T honey

1/4 t Dijon mustard

salt and pepper to taste


Place the salad greens in two bowls or on two plates. Arrange all the rest of the salad ingredients evenly on the two salads. Mix the ingredients for the vinaigrette together with a whisk or pulse in a food processor. Enjoy!
